30 Minutes Prawn Red Thai Curry

30 Minutes Prawn Red Thai Curry

  • 2-3 carrots
  • 1 red pepper
  • 1 lemongrass stick
  • 2 cloves of garlic
  • ⅓ fresh grated ginger
  • 1 tbsp red thai curry paste
  • 1 can coconut milk
  • 2 tbsp water
  • king prawns
  • 1 lime
  • fresh coriander
  • 1 cup mix quinoa and brown rice
  • olive oil for cooking
  1. Cook all the veg on olive oil with the lemongrass stick (bash it with saucepan before putting into the pan) for 3 minutes and then add king prawns and cook for another 4-5 minutes.

  2. Lastly, add the lime juice from one lime and take the lemongrass stick out. I have served it with brown rice and quinoa and fresh coriander on the top.
