Breakfast Brown Rice Pudding Pots

I can’t stand FOOD WASTE. And did you know, 250,000 tonnes of the food that goes to waste each year is still edible. These yummy brown rice pots are full of fibre which is well needed in our diet, and our population is still not eating enough. Most people get on average 18g a day, however we should be aiming for 30g (2 table spoons) a day.

Ingredients:

  • 2 cups of brown rice (leftovers)
  • 1.5 cup of nut milk (add more or less milk if necessary)
  • 1 tbsp of chocolate sweetener from @sweetfreedomuk
  • 1 tsp of date nectar
  • 1 ripe banana (going off, so used it)
  • 1 tsp of cinnamon
Method:
  1. Mix and stir all the ingredients together on medium heath until the rice pudding gets thick.

  2. Then add whatever fruit you need to use up. I have used strawberries and ripe kiwi fruit.
