This is a traditional Czech cake made from quark. It used to be perfect for a snack every Sunday afternoon. I have however created a slight twist and created a healthier option.

Ingredients: Ingredients:
- 4 eggs
- 200g coconut oil (melted)
- 250g quark cheese
- 250g coconut sugar (sift the sugar)
- 300g rice flour (gluten free if you wish)
- 6 tbsp of nut milk
- lemon zest one lemon
- 1.5 tsp of baking powder
Combine coconut oil with the coconut sugar and egg yolks (from 4 eggs). Then add the quark, and mix well. Add lemon skin, nut milk, flour and baking powder.
Make snow from the egg whites. The egg whites snow mix need to be thick. Once it’s ready, fold it into the quark mix.
When the mix is ready, pour it into the baking tray which should be covered in coconut oil and flour, so the cake doesn’t stick.
The last step, just bake it for 45 minutes on 170°C – 180°C.

- 4 vejce
- 200g kokosoveho oleje (rozpusteneho)
- 250g mekkeho tvarohu
- 250g kokosoveho cukru (presyt pres sytko)
- 300g ryzove mouku (ja pouzila bez lepku)
- 6 lzic mandloveho nebo kokosoveho mleka
- postrouhana kura z citronu
- 1.5 lzicky prasku do peciva
Kokosovy olej umichame s kokosovym cukrem a zloutky z vajicek, pridame tvaroh a dobre promichame.
Potom vmichame citronovou kuru, mleko, mouku s praskem do peciva a nakonec tuhy bilkovy snih (ktery se musi nejprve vyslehat).
Testo nalijeme do kokosovym ojelem vymastene a ryzovou moukou posypane babovkove formy a peceme 45 minut na 170°C – 180°C.
Upecenou babovku posypeme zbytkem kokosoveho cukru.
