I know, I know. You may think what a complete nonsense to eat porridge as a sour version, however, I will tell you one thing, it actually works. This is why I love food preparation, as it can be so much fun when it comes to flavours and colours. This bowl of sour porridge is a great source of Fiber, Iron, Vitamin A, D, B12, and C.
Savoury Spinach Porridge

- 50g rolled oats (great source of soluble fiber)
- 1 tbsp soy sauce
- 1 tbsp white wine vinegar
- 1 handful baby spinach
- sprinkle grated parmesan
- 1 egg
- drizzle honey/mustard dressing (optional)
- 250ml water
- pinch salt & pepper
Cook the oats in the water, add salt, pepper, soy sauce, and white vinegar. It needs to be creamy, therefore if it needs more water, feel free to add more.
In the meantime cook your poached egg (cook for 3-4 minutes, all depends on how you like your egg).
Once the oats are cooked, take it off the heat and add the spinach with a bit of parmesan.
Serve the porridge with your poached egg, a bit more parmesan (if leftover) and honey/mustard dressing (if using).
