Sweet Jacket Potato with Feta Cheese Chickpeas and Avocado mix

Sweet potatoes are rich source of fibre. They also include iron, calcium, selenium, and they’re a good source of most of our B vitamins and vitamin C. The key benefit of this root vegetable is that they’re high in an antioxidant known as beta-carotene, which converts to vitamin A once consumed.

Ingredients:

  • 2 sweet potatoes
  • 14 chopped mushrooms
  • 1 tin chickpeas
  • 1 tin sweetcorn
  • 3 cloves garlic
  • 1 tsp chilli flakes
  • 2 avocados
  • fresh coriander
  • olive oil
  • feta cheese
  • bacon (if you are a meat lover)
  • Dressing
  • 2 tsp tahini
  • 2 tsp olive oil
  • juice 1 lime
  • 1 tsp honey
  • salt & pepper
Method:
  1. Preheat the oven 220° and then prick the potatoes with a fork and wrap it in foil and just place it on a baking tray and bake up to 1 hour.

  2. Meanwhile prepare everything else. Place everything into frying pan (except avocado) and fry for few minutes until the mushrooms are nice and soft. Season however you fancy, add more or less.

  3. Then make the dressing, combine all the ingredients and add 2 teaspoons of water and whisk.

  4. Once the potato is cooked add the mix from frying pan add chopped avocado and top it with feta cheese and drizzle over the tahini dressing.
