Vegan Banana Bread

If you have a sweet tooth and love bananas and chocolate, then this vegan banana bread is just for you. It’s super easy and doesn’t have to cost you fortune. Also, if you have too many ripe bananas then this is the best to use them up which means you are preventing food waste.

  • 3-4 medium ripe bananas
  • 1/4 cup coconut oil (melted)
  • 1/4 cup unsweetened coconut milk (or any other non-dairy milk)
  • 1/2 cup light coconut sugar
  • 2 cups self-raising flour (gluten-free)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • dairy free dark chocolate (optional)
  1. Preheat the oven to 200°C. Put a baking paper into your loaf pan.

  2. In a large mixing bowl, roughly mash the bananas. Add the coconut sugar, oil, nut milk, and whisk to incorporate.

  3. Sift in the flour, baking powder, salt, cinnamon, chopped dairy-free chocolate (if used) and use a wooden spoon to mix.

  4. Transfer the batter to your prepared loaf pan, and top with some leftover banana slices (if available).

  5. Bake for 45 minutes,  the fork needs to come out clean when you inserted in the centre.

  6. Allow cooling for 10-15 minutes before cutting into the slices.
