Vegan Homemade Pesto

Homemade pesto is just perfect when you fancy something quick and tasty for dinner or lunch. You can experiment with so many different type of vegetables which will make your pasta on another level. Remember a jar of pesto is normally around £3 in the shops, however if you make your own it’s fresh and at the similar price.

Vegan Homemade Pesto

Ingredients:

  • 1 handful of spinach⁣
  • 1 tbsp of frozen peas⁣
  • 1/2 avocado⁣
  • 1 clove of garlic⁣
  • pinch of salt & pepper⁣
  • 1 tbsp of olive oil⁣
  • 1 tsp of chilli oil⁣
  • lemon juice (1 lemon)⁣
  • 1 tsp of soy sauce⁣
Method:
  1. Blend all the ingredients into the pesto mix, add more salt and pepper or soy sauce if needed.

  2. Stir it into your cooked whole wheat pasta with sun-dried tomatoes. If you fancy non-vegan option, add parmesan to your pesto and pasta.⁣
