Sunday Vegan Pancakes

If you have a sweet tooth then these vegan pancakes are so quick and easy to make. They are just perfect if you fancy something different on Sunday morning. The best thing is, they are a great source of fibre and omega 3.

Sunday Vegan Pancakes

Preparation Time: 5 minutes
Cooking Time: 10 - 15 minutes

Ingredients:

  • 1tsp baking powder
  • 1tsp chia seeds
  • 1tbsp date nectar
  • 400ml coconut milk
  • 200g spelt flour
  • 150g blended oats
  • pinch of salt
  • coconut oil for frying
Method:
  1. Stir all the ingredients, so you get a thick batter.

  2. Once the pan with the coconut oil is hot, use a tablespoon and spread the batter.

  3. Cook on each side for 3 minutes until it’s golden.

  4. Top it off with whatever you fancy. I have used @sweetfreedomuk@missfitsnutrition and of course @pipandnut and some yummy melon.
