Vegan Tofu Scrambled Eggs

Tofu is a good source of protein, especially if you are on a plant-based diet. Protein is essential. It is so much more than simply food for your muscles: every single cell in our body contains protein. It plays a role in maintaining our liver function, mood, immunity, hormone balance, skin, hair and so much more. It’s definitely a food group which takes place on our balanced plate.

Vegan Tofu Scrambled Eggs

  • 1 tbsp olive oil⁠
  • 1/2 tofu⁠
  • 1 tsp turmeric⁠
  • 1 tsp Italian herbs⁠
  • 1/2 tsp salt (use less if necessary)⁠
  • 1 tbsp natural yeast
  • 1 chopped mushroom
  • 2 handfuls spinach⁠
  • 1 tbsp tamari sauce⁠
  • 2 tsp sesame nuts mix
  1. Add the olive oil on the frying, then add tofu, turmeric, herbs, salt and natural yeast.

  2. Stir with the wooden spoon, so it’s all combined.

  3. Then add the mushroom, spinach and tamari sauce.

  4. Towards the end, add the sesame seeds mix to add a bit omega-3 onto your plant-based eggs.

  5. And here you are, now enjoy your plant-based eggs.
