Ingredients:
- 1 carrot
- 5 chopped mushrooms
- 2 sweet potatoes
- half cauliflower
- 1/2 tsp chilli flakes
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 1/2 tsp salt
- 1/2 red cabbage
- 1 tsp tagine sauce
- 1 onion
- 1/2 cup of water
- 2 tbsp parmesan cheese
- 1/2 feta cheese
- 1 cup of brown rice and quinoa
Roast the following veggies: carrot, 5 chopped mushrooms, sweet potatoes, half head of cauliflower, 1/2 tsp chilli flakes, 1 tbsp of olive oil, 1 tbsp of soy sauce, 1/2 tsp of salt.
Roast for 30 minutes on 200°. In a meantime boil 1/2 red cabbage and prep 1 cup of brown rice mix with quinoa.
On olive oil fry 1 onion then add your roasted veg, cabbage, 1 tsp of soy sauce, 1 tsp of tagine sauce and a bit of water. In addition, add a bit of parmesan cheese and feta. Once it’s all combined, top it off with more feta if you wish.
