Vegetarian Winter Feta Cheese & Red Cabbage Buddha Bowl

Vegetarian Winter Feta Cheese & Red Cabbage Buddha Bowl

Ingredients:

  • 1 carrot
  • 5 chopped mushrooms
  • 2 sweet potatoes
  • half cauliflower
  • 1/2 tsp chilli flakes
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1/2 tsp salt
  • 1/2 red cabbage
  • 1 tsp tagine sauce
  • 1 onion
  • 1/2 cup of water
  • 2 tbsp parmesan cheese
  • 1/2 feta cheese
  • 1 cup of brown rice and quinoa
Method:
  1. Roast the following veggies: carrot, 5 chopped mushrooms, sweet potatoes, half head of cauliflower, 1/2 tsp chilli flakes, 1 tbsp of olive oil, 1 tbsp of soy sauce, 1/2 tsp of salt.

  2. Roast for 30 minutes on 200°. In a meantime boil 1/2 red cabbage and prep 1 cup of brown rice mix with quinoa.

  3. On olive oil fry 1 onion then add your roasted veg, cabbage, 1 tsp of soy sauce, 1 tsp of tagine sauce and a bit of water. In addition, add a bit of parmesan cheese and feta. Once it’s all combined, top it off with more feta if you wish.
